THE SEDIMENTATION DEVICE
Settlement value (Sedimentation):
It is an important method, which is giving the gluten quality of the
wheat. The sendimentation value shall vary acc orcling to the grinding
technique. Due to this reason, if the sedimentation value to be determined
for the wheat, the sample should be grinded in a standard method. The
special mills should be used for the realization of the experiments
to be made on the flour received from the wheat and should be screened
through the screen with 150 micron and 9xx. The settlement value is
the volume created by the settlement after duration due to the water
absorbtion of the flour particles in definite efficiency and hugeness,
which is located in weak aqueous acidic media. A quantity of 3.2 gr
flour shall be weighed and put in a special sedimentation tube, and
50 ml bromephenol blue liquid shall be added, and then the tube shall
be closed and shaked strongly. 25 ml test solution ( Lactic acid + isopropy
+ Water mixture) shall be added into the tube and then shaked for 5
minutes on a shaker. The tubes released from the shaker, and 5 minutes
later, the settled flour amount shall be read from the scale on the
tube as the sedimentation value, by avera~in~ the two parallels. This
value shall be high and vary according to the gluten quality of the
flour. While evaluating the bread making quality flour 15-20 ml is accepted
as medium, 25-30 ml as good and above 30 as excellent quality.
Delayed Sedimentation Test:
This is a method, which shall be applied for the wheat affected by the
hazardous insects and its product flour. Bromephenol blue liquid shall
be added into the tube which the flour has put and then shakeci for
5 minutes, and then the tubes shall be located in a suitable place and
keep for an hour and then preoceed with the experiment. If the value
which is going to be determined is lower than the one determined with
normal sedimentation method, it shall be understood that the wheat has
been effected by the hazardous insects ( for example the delayed swedimentation
value is 20-15-10 mland normal sedimentation value is ~25 ml ) however,
if the value shall not be changed or increased, it means the quality
of the wheat is good.
