Gluten Centrifugal (Gluten index) Value:
It is not advised to use this Device as alone. It shall never provide
the result of a precise result by the washing of the Gluten with the
potable water and the centrifugal process. The Gluten received from
the Gluten Washing device should be located on to the Gluten centrifugal
device. The Device shall operate for 1 minute with 6000rpm and seperates
the gluten bonds. The gluten values, which are produced, shall be weighed
and calculated according to the following formula, as gluten index;
The amount which is left on the screen

Total wet gluten
The passing from the screen could vary as low or high, due to the gluten
centrifuged and the quality. In case the gluten is weak and the wet
amount passed shall be 0 as index, and when strong, most of the gluten
shall be kept on the screen and the gluten index is found to be 100.
There are two aims of the gluten index test: first one is the usage
of the test instead of testing by the subjective feeling test by the
passage of the wet dough between two fingers, and the second one is
the usage of this method for the determination of the broken wheat .
It shall take 7-8 minutes for the determination of the wet gluten and
the gluten index value of the broken wheat.

of 1 minute, within 5 seconds stopped due to breakage.
