Ash: is the residue of the material burnt, ant composed of
inorganic material oxides. The material found in the ground in various amounts
are necessary for the plants and in modern planting technologies, are used as
fertilizer at suitable times and amounts. The substances such as The K, Ca, Mg,
Fe, P and S are the most important ones. The mineral materials found in the
wheat are decreased from outside to inside. It is 0.3% at the endosperm, 6-8%
at the bran. The composition of the ash depends on the mineral content of the
ground it is produced, the adsorbtion value by the plant and the fertilisation
method. In avarage it is 1 .3-2.5% and for Turkish wheat, it varies between
1.34-2. 1%. The ash amount of the wheat directly related with the flour
efficiency. In ~cneral, the ash content varies negligibly, for the different
flour but has similar efficiency. By using this property, the ash content of
the flour shall be determined and the efficiency values shall be determined on
ash tables ( mosh ).
The mixing of the skin of the wheat
into the flour shall be adjusted to minimize, by cleaning. roller adjustment,
screen mesh size selection, etc. The mineral material existed in the wheat ash
